3 New Head Chefs join Gilpin Hotel & Lake House

Ollie Bridgwater (ex Fat Duck), Aakash Ohol (ex HRiSHi), and Tom ‘Westy’ Westerland (ex Lucknam Park) have begun to put their own stamp, creativity, and cooking techniques into practice whilst developing entirely new menus for their individual restaurants.

Though the aim is to create three very different restaurants, headed up by three very different chefs, they are working together whilst sharing the same vision, commitment, passion and values that are built on sustainable sourcing with low to no food miles and supporting local producers.

In the Michelin-starred, four AA rosette restaurant at Gilpin Hotel, great Lake District produce and classic methods are used to deliver unbelievable textures and flavours – modern British cuisine with a twist.

Our casual restaurant with two AA Rosettes… the laid-back Gilpin Spice has an open kitchen serving pan-Asian dishes inspired by countries along the spice trail – spanning the Philippines, the Indian sub-continent, Malaysia, Thailand, Indonesia, Japan and China.

Our new restaurant at Gilpin Lake House opened at the beginning of November 2022 and we are delighted to announce our brand new Head Chef – Tom ‘Westy’ Westerland. Westy’s philosophy revolves around food being fun, and there is always a bit of a story behind it. Westy has created a menu that is fun, entertaining, and nostalgic and taps into a sense of playfulness to create memorable, talk-worthy dishes.
